The Cucurbita family includes what we call Summer Squash, such as Zucchini and other soft skinned squash like Patty Pans that we enjoy all summer. Then there’s Winter Squash or the long storage, hard skinned squash such as Butternut and Acorn Squash that we can keep all winter long and the lesser known gourds. It seems that the domestication of this species in the New World dates back over 10,000 years and now we find squash grown around the globe with a huge range of varieties, all known for being relatively easy to grow and prolific in their fruiting.
