The more you pick, the more you get! Summer squash are usually considered best eaten when the fruit is young, the skin still tender and the seeds barely formed. But you will find that many of these plants may get away from you and large fruits will suddenly appear where you swore there were none the day before. Do not fear! These larger fruits can be eaten as delicious roasted vegetables, just scoop out the seeds and either stuff with chopped tomatoes and garlic or more simply chop into inch thick slices and drizzle with olive oil and salt and throw on the BBQ. Where I live people say that the reason why anyone locks their car is just to keep neighbours from loading their front seat with oversized Zucchini!
